Purpose:
The Senior Bartender is responsible for overseeing bar operations, ensuring that beverages are prepared and served to the highest standards of quality, consistency, and presentation. This role supports outlet leadership by supervising bar colleagues, maintaining product knowledge excellence, and driving revenue through upselling and creative beverage recommendations. The Senior Bartender ensures operating standards are followed, supports training initiatives, monitors guest feedback, and leads by example to consistently exceed guest expectations.
Scope of Position:
- Bar Operations & Beverage Production
Lead and support the daily operation of the bar, ensuring all beverages are produced consistently, according to brand recipes and service standards, while maintaining cleanliness, order, and equipment readiness. - Guest Interaction, Service Excellence & Experience
Manage guest engagement at the bar, ensuring warm hospitality, personalised recommendations, effective complaint handling, and the delivery of a memorable beverage experience. - Training, Coaching & Team Support
Support the development of bar colleagues by identifying training needs, conducting on- and off-job training, and ensuring all new staff receive proper induction and service knowledge. - Standards Compliance & Operational Readiness
Ensure bar policies, hygiene requirements, safety procedures, stock systems, and cashiering protocols are adhered to at all times. - Inventory, Cost & Revenue Management
Assist outlet leaders in monitoring stock levels, minimising wastage, recording breakages, managing par levels, and actively driving beverage sales through upselling and product recommendations.
Main Duties:
(Job Related Duties)
1. Bar Operations & Beverage Production
• Follow and enforce bar opening and closing procedures.
• Ensure all beverages conform to brand recipes and quality standards.
• Maintain the bar area, equipment, utensils, and service sections in a clean and hygienic condition.
• Polish, store, and handle glassware correctly, minimising breakage.
• Ensure mis-en-place is completed before service and replenished as required.
• Monitor bar workstations to confirm readiness before service peaks.
2. Guest Interaction, Service Excellence & Experience
• Build rapport with guests, using names whenever possible.
• Provide professional product recommendations based on guest preferences.
• Handle guest enquiries, feedback, and complaints promptly.
• Support guest loyalty by consistently delivering exceptional service.
• Keep supervisors informed of notable guest interactions or issues.
3. Training, Coaching & Team Support
• Identify service gaps and recommend relevant training.
• Deliver bar-related training and refreshers to colleagues, ensuring new staff are inducted properly.
• Ensure training records are updated and communicated to HR.
• Support outlet leadership in ensuring the bar team maintains company dress and grooming standards.
4. Standards Compliance & Operational Readiness
• Ensure all Micros transactions are completed accurately and all voids are authorised.
• Ensure compliance with club hygiene rules and legal safety requirements.
• Assist the cashier with postings and payments as required.
• Record and report breakages, wastage, and maintenance issues immediately.
• Maintain accurate communication and handover logs.
5. Inventory, Cost & Revenue Management
• Monitor par levels, reduce wastage, and ensure proper stock rotation.
• Assist with requisitions and maintain accurate beverage storage.
• Maximise bar revenue through upselling techniques and product knowledge.
• Protect club assets by preventing loss and safeguarding inventory.
• Support event and function setups as directed.
2. Ancillary Duties:
In line with the Club’s strive for continuous improvement, you may be requested to participate in various extra activities contributing towards individuals and organizational growth.
Represent the department or a group in various committees, such as the Staff Committee, Green Theme (environmental), Food Committee, Sport Committee, or projects. Be trained as a Fire Marshall or First Aider.
3. Quality Responsibilities:
Aware of Dubai Golf Mission, Vision and Values. Will be responsible to apply the 4 Service Steps throughout serving internal and external customers.
4. IT Security Awareness:
- Read, Understand, and comply with all applicable Information Security Policies and Procedures of wasl DG.
- Co-operate, co-ordinate and share information with Internal/External Audit teams as appropriate and applicable.
- Attend Information Security Awareness sessions conducted by the wasl IT Department.
- All Information Security breaches, events, weaknesses, incidents (actual or suspected breaches) shall be immediately reported to the IT Service Desk.

2–3 years' bartending experience, including exposure to craft cocktails and premium spirits. |
Guest engagement and relationship-building skills. |

Strong knowledge of beverages, cocktail preparation, wines, and spirits. |
Ability to lead by example and mentor junior bartenders. |
|
Fluency in English, written and spoken; additional languages an advantage. |
Creative flair and ability to develop signature beverages. |
|
Experience using POS systems and cashiering procedures. |
Strong product knowledge and confident upselling ability. |
|
Previous experience in a supervisory or senior bar role is preferred. |
High levels of initiative, adaptability, and teamwork. |
